Banana Sugar-Free Chocolate Cake

  • 1 ½ cups oat flour
  • 1 ½ tsp baking soda
  • 2 tbsp maca powder
  • 3 tbsp cacao powder
  • 8 dates, soaked in hot water and blended
  • 3 large ripe bananas, mashed
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Chopped dark chocolate (as much as you like)
  • 2 eggs
  • ⅓ cup olive oil

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Soak the dates in hot water for about 10 minutes, then blend them into a smooth paste.
  3. In a large bowl, mix together the oat flour, baking soda, maca powder, and cacao powder.
  4. In another bowl, mash the bananas and add cinnamon and vanilla extract.
  5. Add the blended dates, eggs, and olive oil to the mashed bananas. Mix well.
  6. Gradually combine the wet ingredients with the dry ingredients until fully incorporated.
  7. Fold in the chopped dark chocolate.
  8. Pour the batter into a greased or lined baking tin.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Serve warm, and enjoy with toppings like coconut yogurt or Greek yogurt, peanut butter, and butter. Add some berries or other fruits for extra flavor! IMG_0051.jpeg Enjoy your cake! IMG_9863.jpeg
