Broccoli vegan pesto

Ingredients:

  • Broccoli 450g (can be frozen)
  • Small onion
  • Garlic 2-3 cloves
  • Smoked Tofu 60 g (half of the package)
  • Olive oil 5-8 tbsp
  • Mix nuts, peanuts and cashews, 1-2 tbsp
  • lemon juice 1 tsp

Spices:

  • salt, pepper, oregano, cayenne pepper (pinch, very hot)
  • parsley on the top

Steam or boil the broccoli florets for 4 to 5 minutes until just tender. Place in the fridge to cool and blend. Add the olive oil to a heavy-bottomed pan. When the oil has heated in the pan, add chopped onion and garlic, fry gently for 1-2 minutes, until golden brown. Add broccoli and continue frying over low heat then pour the rest of the oil to get a smooth consistency. Chop or blend the nuts into small pieces and add them to the whole, pour lemon juice, mix on the fire for a while and it's ready!

Serve hot with pasta and parsley or with bread.
